A large part of our business is Custom Processing of beef, pork, lamb and wild game. We also offer locker rentals. We are one of the few lockers that still age beef from 14 to 21 days. Aged to perfection for tenderness. Order beef quarters or sides and pork halves. We assure you that we do not cut until you have given us your cutting instructions! We are extremely proud of our local producers that take pride in raising quality beef, pork and lamb. Buy direct from the farmer, we will make the arrangements! All sausages are made with lean pork. The price listed includes the pork and wrapping of whole carcass sausage choices. All prices listed below are based on the pre-cooked stuffed weight, NOT the weight of the wild game OR the finished weight.
ALL deer trim is kept separate. This extra care adds to time and cost. Sausages will not be started until January. We will call you when each item is finished. Storage Fees will be applied if product is not picked up within 2 weeks of the call.

Important Deer Processing Notes:
• All deer trim for saugage is kept separate. This special care adds time and cost.
• Deer are processed in the order they arrive.
• Prices include wrapping or bagging. Vacuum packaging is available for an additional charge.
• We use established curing methods that require a reasonable amount of time.
• All saugage and cured products are charged on raw-stuffed weight, allow for shrinkage.
• Venison that is made into 2 or more products takes more time to process.
• Home processed venison trim is welcomed.
• A possession tag or registration number MUST accompany home processed deer brought in for saugage. Approximately 50 pounds per registration tag is allowed.
We prefer all whole carcass deer and unfrozen (frozen deer and deer with no hide should expect an extra charge).
