The annual date for LEFSE DAGEN falls on the second Saturday in May, which is two weeks prior to the Saturday of the Memorial Day weekend.

The Lefse Dagen celebration, which began in 1987, is sponsored by the Starbuck Depot Society and supported by the Starbuck Study Club. This celebration has a twofold purpose:

  1. To commemorate the record setting, yet unbroken, world's largest lefse baked during the Starbuck Centennial Celebration in 1983 by a group of Starbuck Lions;
  2. To hold open house at the Starbuck Depot Square. The site where the 70 pound lefse with a diameter of 9 feet 8 inches was baked.

In 2006 the Depot Society commissioned a special photo of the making of the world's largest lefse and unvailed it to the public during the Lefse Dagen Day celebration.

Many exciting activities are planned for this special day in our small town of 1300 residents. Activities included music by the Norskies, Scandianvain food, crafts sales, Shari Opdahl and the Elementary singers, Lefse making demonstations and Jerry Anderson and his muscial family.

Scandinavian Recipes

Lefse Recipe: (Corrine Hoium)
Traditionally this recipe is used by local groups during Scandinavian events held throughout the year.

   
Ingredients:  
  • 5 lb. Russet potatoes (pealed and cooked)
  • 1/2 cup whipping cream
  • 1/4 pound butter or margarine
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 4 cups flour
Baking Instructions:  
Mash the potatoes with the whipping cream, butter or margarine, salt & sugar. Cool in the refrigerator over night. Rice potatoes and add the flour. Roll and bake (1/3 cup makes one lefse round). One batch makes 30 lefse rounds.

Rommegrot Recipe: (Mrs Henning Lysen)
Traditionally this recipe is used by local groups during Scandinavian events held throughout the year.

 
Ingredients:  
  • 1 pint thick whipping cream
  • 1/2 cup flour
  • 1 cup boiled milk
  • 1/2 tablespoon salt
  • 1 tablespoon sugar
Baking Instructions:  
Boil ream about 20 minutes, then add flour and continue stirring until butter separates. Then drain off butter. Add the boiled hot milk gradually, stirring so as to make it smooth. Cook for about 10 minutes, add salt and sugar, pour into bowl, sprinkle with sugar, cinnamon and butter. Serve hot

Sodt Suppe (fruit soup) Recipe:

Traditionally this recipe is used by local groups during Scandiavian events held throughout the year.

   
Ingredients:  
  • 2 lbs prunes (soaked over night
  • 1 lb raisins
  • 1 can apricots
  • 2 small cinnamon sticks
  • 1 lemon
  • 2 cups sugar
Baking Instructions:  
Slowly cook prunes and raisins. Use 2 qts of this juice to cook with 1 cup tapioca. Then add it to mixture. Cook apricots (if dried cook separately) and mix all together. Makes 6 - 8 qts
